Omelette with vegetables

Here’s a simple and delicious recipe for a vegetable omelette:

Ingredients:

  • 3 large eggs
  • 1/4 cup diced bell peppers (any color)
  • 1/4 cup diced onions
  • 1/4 cup diced tomatoes (optional)
  • 1/4 cup chopped spinach or kale
  • 1/4 cup diced mushrooms
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter
  • Shredded cheese (optional)

Instructions:

  1. Prepare the vegetables: Wash and chop all the vegetables you're using. Set them aside.

  2. Beat the eggs: Crack the eggs into a bowl, add a pinch of salt and pepper, and beat them until smooth.

  3. Sauté the vegetables: Heat the olive oil or butter in a non-stick skillet over medium heat. Add the onions and bell peppers, sauté for 2-3 minutes until they start to soften. Add the mushrooms and cook for another 2 minutes. If using spinach or kale, add it last and cook for just a minute until wilted.

  4. Add the eggs: Pour the beaten eggs over the cooked vegetables, tilting the pan to spread the eggs evenly. Let it cook undisturbed for a minute.

  5. Optional: Add cheese: If you like, sprinkle shredded cheese over the omelette.

  6. Cook and fold: Once the edges of the omelette begin to set, use a spatula to gently lift one side and fold the omelette in half. Cook for another minute, until the eggs are fully set.

  7. Serve: Slide the omelette onto a plate and enjoy!
